Minced Dried Oyster with Diced Vegetables

INGREDIENTS:
125 g Dried Oyster
90 g Carrot
90 g Bamboo Shoot
6 pieces Dried Chinese Black Mushrooms
90 g Lean Pork
2 stalks Spring Onion
1 stalk Chinese Parsley
1 head of Lettuce
1 Tbsp Seafood Paste (Hoisin Sauce)

Seasoning:
1 1/2 Tbsp Light Soya Sauce
1/2 tsp Sugar
1/3 tsp Salt
1 tsp Sesame Oil
1/2 tsp White Pepper
1/8 cup water

Thickening Sauce:
1 tsp Cornflour
1 Tbsp Water

METHODS:
1. Wash and soak the oyster and mushrooms. Trim off the mushroom stems. Steam for about 15 mins and chop finely.
2. Mince the meat and marinate with 1 tsp of light soya sauce and 1/2 tsp of dark soya sauce and 1/2 tsp of cornflour.
3. Parboil carrot and bamboo shoots. Dice. Coarsely chop the parsley and spring onion.
4. Stir fry the minced pork with 3 Tbsp of corn oil / peanut oil. Add the diced oyster and mushrooms with 1 Tbsp of Chinese wine.
5. Add all the other ingredients and seasoning. Stir fry for about 10 minutes before stirring in the thickening sauce.
6. Sprinkle the spring onion and parsley on it before serving.
7. Wash and clean the lettuce and cut it into round pieces. Spread a little seafood paste (hoisin sauce) on each piece and wrap the ingredients in the lettuce pieces. Roll it up and eat! :)
